Once kept as a tea for special occasions only, matcha has come to be a tea for anytime. As a popular green tea, Matcha is excellent for pretty much anything -iced tea, ice cream, smoothies and more. You might already be familiar with this tea, but if you’re not, this is definitely a blend not to miss out on.

With your first sip, you’ll notice how smooth and rich the Japanese Izu Premium Match is in comparison to more traditional teas that often steep the leaf but do not incorporate it directly into the tea. It is a filling and satisfying tea that finishes with an astringent taste from the Gyokuro that is part of our particular blend. There is a lot of work that goes into making our premium matcha--from growing the Gyokuro leaves in shade to encourage high chlorophyll production to steaming and drying the leaves, removing stems and veins and then stone-grinding the leaf into a powder.

The best way to prepare matcha is however you intend to consume it. If you want to enjoy it hot, then let the water boil and cool to about 82°C and then add it to your teaspoon of matcha. Consider using a strainer in order to avoid clumps from mixing powder. You can also enjoy it iced or even in the traditional ceremonial style, as this blend is a premium tea that is ideal for even the most austere of traditions.

Quangzhou Milk Oolong

This oolong is a feat for tea lovers everywhere and it differs from traditional oolongs by having a milky flavour that isn’t from any added dairy or substitutes. If you love having milk in your tea, or even if you’re lactose-intolerant or vegan, this is a wonderful way to enjoy a sweet and creamy tea without any addition besides water.

Like most oolong teas, the milk oolong is semi-fermented and tastes like it is somewhere between a black tea and a green tea. This blend of oolong however, gets the milky taste when there is a vast temperature fluctuation during harvest. Rather than have unpredictable weather control harvests, though, the tea leaves are plucked and then chilled in an air-conditioned room until it is at peak fermentation. The best leaves are sorted out from this bunch and then steamed over a fire, then after that it is dried, sorted and packaged into the blend that you receive.

With the first sip, you’ll taste the milky sweetness of the oolong leaves as well as orchid-like floral flavours underneath the predominant taste. With low caffeine content from how the leaves are prepared, you can enjoy this tea anytime. As you steep a cup of hojicha, you’ll see that the green leaves have been roasted. This is part of the special process that we use to perfect our tea. In 1920s Japan, hojicha was discovered by a tea master who had roasted the leaves in a porcelain pot, breaking away from the traditional way of making green tea by steaming fresh leaves.

Hojicha, if you haven’t tried it yet, is a wonderful comfort tea. Its warm, inviting flavours make it a good tea to turn to when you’re having a rough day or if you just want to soak in the appreciation of a good day.

Sencha Green Tea

Japanese Sencha is a quintessential green tea that is all the best things about a green tea and can win over even nonenthusiasts of this family of tea. As a tea that is highly dependent on conditions like the season and location where it grows, the flavour from Sencha is evident through its cultivation. Sencha uses leaves from the first growth of the spring, and is said to pour their winter-stored nutrients and flavour in that first flush. 

One of the great things about Sencha is that its flavour is derived from the temperature of the water that you steep it in, so if you’re not fond of a piping hot cup of Sencha, you may want to try something a little cooler. The hotter the temperature, the more astringent the taste will be--so if that’s not your preferred kind of tea, try it at a lower temperature to enjoy the softer and subtler flavour of this tea. You may also notice that for a green tea, the caffeine is quite low. That makes it ideal for enjoying any time of day, particularly if you’re sensitive to caffeine before bedtime.
